Kicking off the New Year for Food Truck Tuesdays is The Zubik House, a trailer touting a menu filled with creative kolaches, a traditional Czech pastry. Chef Andy Zubik wanted to spread the word of kolache around Austin and this truck has definitely succeeded. Founded in 2009, this food truck now offers catering services along with it’s weekly station at the SFC Farmer’s Market in Republic Square Park. Every Saturday morning Chef Zubik whips up endless amounts of kolaches with fillings ranging from blueberries, basil and balsamic to bacon, apple and brie. A kolache is at base a pastry filled with fruit filling, but these kolaches are a range of savory and sweet with a Texan twist. Saturday mornings at the truck also bring Czech inspired brunch options such as kolache bread french toast and Czech Benedict.
